let's talk about empanadas
Empanadas vallunas are typical of Colombia's Valle del Cauca province (the city of Cali). They are savory with the bite of onion and garlic and the golden color of turmeric. They are eaten with aji, a sauce made of onions and tomatoes and lime juice. I like them fresh out of the oil, but my father eats them cold the next day with a cup of tinto (black coffee).
