You say corncake, I say arepa

In my job as a librarian, I was recently doing some research on food (specifically a flatbread called injera from Ethiopia) and that got me thinking about arepas. Arepas are Colombian street food, breakfast food, dinner food. They are made of corn (masa) and formed by hand into flat, round disks.

They are also, sadly, hard to come by in Minnesota. A few places to try:

  • Hola Arepa food truck
